Real Cherries Instead of Syrup

Lemke Berlin's Kirsch Weisse combines the tradition of Berliner Weisse with real sweet and sour cherries. Instead of simply adding fruit syrup to the finished beer, Lemke relies on traditional mixed fermentation and allows the young sour beer to continue maturing directly on the fruits.

The base is Lemke's Berliner "Budike" Weisse, which is fermented with special yeast strains – including Brettanomyces – and lactic acid cultures. Shortly before the end of fermentation, sweet and sour cherries are added. The natural fruit sugar initiates a second fermentation and combines the aromas of the cherries with the characteristic acidity of Berliner Weisse.

The result is wonderfully fruity, sparkling, and balanced – with plenty of cherry, lively acidity, and just enough sweetness to keep the beer harmonious.

How it Tastes

Even in the glass, the Kirsch Weisse stands out with its rich, warm red color and pink foam. The nose is dominated by ripe sweet cherries with a delicate marzipan note, accompanied by fresh green apple.

On the palate, the sour cherries take over: fruity, fresh, and pleasantly tart. Lemon and lively carbonation are also present before the beer finishes with a delicately bitter and pleasantly dry finale.
